My solution has worked for me for 12 plus years, 2.5" class 5 hitch and a custom length stinger with side chains bolted to sides of the hitch where it mounts to the frame.

Not flashy but it works well with no camper to boat or race trailer contact.

We use a stainless steel washer tub with a circular fire ring fed by a 5 gallon propane bottle. It now has a foot rest rail all the way around for those with cold feet. (Many western state parks won't allow burning wood products in summer for fire prevention regions, and some for air quality.)

I viewed the Host Mamoth camper last month, the slide is close to 2' above the hitch, if the boat trailer and hitch are extended backward sufficiently you should have no clearance issues opening the slide.
